Simple Elderberry Syrup

Today is my due date and I really thought our baby would have arrived by now. I don't know why, I wasn't early with the other two. Instead of sitting around twirling my thumbs, I decided to make a batch of Elderberry syrup with the berries I recently froze. This stuff is amazing and so easy to make. A must for anybody but especially those with young children because it tastes so good and helps fight of the common cold an boost the immune system during the cold/flu season! Both of my kids love this syrup! I mixed a bit into some peach lemonade and they love it. As you can see, Cedar is thoroughly enjoying his cup.

Elderberries are a wonderful remedy for the reasons mentioned above. Besides being an antiviral, the berries are high in proanthocyanidins. This flavonoid strengthens the vascular integrity of capillaries, veins, and arteries. Elderberries are antiinflammatory and antioxidant. As a matter of fact, these berries are higher in antioxidant activity than cranberries and blueberries! 

I usually make it with more ingredients such as ginger or orange zest but today I kept it simple to reserve my energy for giving birth. Please send some graceful birth/baby arrival vibes my way!

*Please note to never eat raw Elderberries which are potentially toxic. Also stick to the Sambucus Canadensis which is the black/bluish elderberries. 


Elderberry Syrup Recipe

Ingredients

  • 1 cup fresh or frozen Elderberries

  • 1 cup of honey

  • 3 cups of water

  • Directions:

  • 1. Put the berries in a pot and cover with the water.

  • 2. Cover and simmer for 45 minutes.

  • 3. Smash up berries and strain the concoction through a cheese cloth.

  • 4. Add the honey.

  • 5. Mix well and store in fridge.

  • 6. Shake before using. You may take by the spoonfuls throughout the day, add to oatmeal, tea, juice, whatever makes you happy :)

*Should last about 3 months when stored properly in the refrigerator.
